La Petite Cave was constructed in the ramparts of a medieval castle in the 12th century in a village called Saignon one of the oldest villages in France. I brought La Petite Cave as a ruin in 2002 and renovated it for two years to convert it into a 20 seat itermit gastronomic restaurant in a vaulted limestone cave. After we opened we had Michelin guide recognition, and went on to achieve a place in all the local and French guides.

The gastronomic menu, changed every day with what produce was at its best. Our sommelier paired the tasting menu with great french wines. I am very proud of this project because I do believe it is one of the oldest restaurants in the whole of France, as the village of Saignon has one of the oldest historical archives in the country.
